Oats are such a great staple to keep in your pantry, especially if you’re a college student! They’re inexpensive and last for a long time, and you can make so many different recipes with them. Quick oats are my personal favorite because they’re super easy to cook in the microwave. During the school year I love to make this yummy peanut butter oatmeal before my morning classes - it’s quick and filling, and the perfect breakfast to start off a busy day. I like using crunchy peanut butter for this oatmeal recipe, but you can substitute creamy peanut butter if you prefer. Feel free to play around with different nut butters, too! The peanut butter is there for flavor and protein, so make whatever substitutions you want to alter the recipe for your own taste. The pancake syrup might come as a surprise, but I like using it instead of pure sugar. The flavor isn’t overwhelming and it adds a little something extra to the dish! I always top this oatmeal with a handful of chocolate chips - it’s a fun way to indulge my inner child, who always wants to eat chocolate for breakfast. Luckily, this recipe is a little healthier and a lot more filling than chocolate cereal!
Recipe: Peanut Butter Oatmeal (makes 1 large serving)
Ingredients:
½ cup quick oats
1 cup water
Approx. 2 tbsp crunchy peanut butter
Approx. 1-2 tbsp maple or pancake syrup
Chocolate chips, to taste
In a microwave safe bowl,* combine oats, peanut butter, syrup, and water. Microwave according to oatmeal package directions, about 2-3 minutes, stirring at regular intervals. When fully cooked, sprinkle chocolate chips on top and enjoy!
* You can also make this recipe on the stovetop - just follow the oatmeal package instructions.
