
Peppers and mushrooms are so easy to make, and they complement so many dishes! Serve over pasta, with rice, or eat alone as a side dish. We love to serve peppers and mushrooms with spaghetti squash or gnocchi, but there are so many options!

Red or orange bell peppers work best for this recipe, but anything will do in a pinch! For onions, yellow or sweet onions are amazing choices. Any mushrooms work well! This recipe is super flexible depending on whatever you have access to.

Recipe: Peppers and Mushrooms (makes 2-4 servings)
Ingredients
1-2 bell peppers
1 8-oz container mushrooms (white or baby bella)
1 onion
2-3 tbsp olive oil
Minced garlic, ½ tbsp or to taste
Salt, to taste
Wash peppers and wipe mushrooms with a paper towel. Slice onion, peppers, and mushrooms. In a skillet, heat olive oil and add onions, salt, and minced garlic. Cook until onions are soft, about 5-10 minutes. Add the peppers and cook for about 10 minutes or until softened. Add the mushrooms and cook for another 5-10 minutes. Serve alone or with Italian sausage, and enjoy!
