Recipe: Mediterranean Zucchini Wrap



Zucchini is one of my favorite summer veggies. It lends itself well to all kinds of dishes - you can sauté it, grill it, make “zoodles,” bake some zucchini chips, or satisfy your sweet tooth with zucchini bread. My favorite way to prepare zucchini right now is this yummy Mediterranean-inspired wrap, with hummus, greens, and Kalamata olives. First, wash and slice your zucchini. I used one zucchini for this recipe, and it made enough for three or four wraps:

Start heating up some olive oil in a skillet, and add your zucchini and seasoning. I used Greek seasoning from Penzey’s Spices:

As the zucchini cooks down, you can start preparing the other ingredients. Make sure you have tortillas, hummus, greens (I used fresh baby spinach), and olives. You can also add fresh tomatoes and feta if you want.


Once the zucchini is cooked through, start putting the wraps together. I layered the hummus, then the spinach, then zucchini, and finally the olives. Depending on the size of your tortillas and zucchini, one zucchini will make 3-4 wraps.


A yummy adaptation of this recipe is to make a bowl instead of a wrap! In place of the hummus, add a can of chickpeas to the skillet when you’re sautéing the zucchini. When the chickpeas and zucchini are cooked, serve in a bowl with greens and your choice of toppings - I like olives, tomatoes, and feta. Enjoy!
